Wine Making.
A selection of five different Pinot Gris clones were hand harvested from the Cromwell Basin Vineyard in late March 2019. We go to great lengths to select only the absolute best small parcels of fruit from the entire vineyard to make our Falls Dam. Fruit is assessed daily during the ripening period to identify optimum sugar/acid balance and desired flavour characteristics for harvest.
Tasting Notes.
Our 2019 Pinot Gris shows aromatics of wildflowers, white peach, persimmon and honeysuckle. Add to this, hints of white spice and silty stony minerality to give a gentle perfume familiar to this varietal. The palate is richly textured with elegance and poise and shows great depth and persistence.
Food Recommendation.
Our Sommelier recommends just about anything, serve with grilled prawns or fish, chicken breast with a creamy sauce.

Cellaring.
Best to drink young. To preserve the delicate floral and fruit aromas, we bottle it as young as possible and send it to you to enjoy in its prime.
